What you'll do
During this interactive session I’ll teach you the basics of canning and preserving. You’ll learn how to water-bath and can delicious local produce in new and unique combinations. I’ll also teach you how to make brine, pack your jars properly, sterilize equipment, and ensure that your produce is properly sealed. Of course, we’ll take breaks to enjoy some local snacks and taste some hot sauces, made right here. You’ll get to take home your own jar of the canned creation to share with friends and family.
I’ve been canning and preserving for as long as I can remember. I founded Marshall's Haute Sauce and have written a book on canning called “Preservation Pantry: Modern Canning from Root to Top and Stem to Core.” I love sharing my passion with everyone I meet.
Snacks and refreshments We'll have a spread of local snacks as well as my hot sauces to tide us over while canning.
Canning Equipment Review All canning equipment and supplies will be on site to use, review, and explore.

Where you'll be
We’ll can at my commercial kitchen in the Brentwood-Darlington neighborhood of Southeast Portland, near the cusp of the town of Milwaukie. You’ll learn all about my business and the canning process, which we do ourselves.
