What you'll do
This leisurely day of wining and dining in the country begins with a scenic drive from Sydney Harbour to the Southern Highlands.
On arrival to the Highlands it's back to school with a Pinot Masterclass showcasing the premier grape variety of this cool-climate region. Hosted by a resident Centennial Vineyards oenophile you'll learn about the various Pinot mutations used to make sparkling, white and red wines. During the class you'll taste flights of estate grown wines accompanied by matching morsels.
Continuing the focus on local produce you'll experience fine dining Southern Highlands style at Eschalot. Owner and head chef Matty Roberts will lead you through the garden surrounding the restaurant where he will pick the freshest of fresh ingredients to prepare the 3-course meal you are about to savour. Complementing Matty's skill in the kitchen, owner and maître d’ Cass Wallace will select a local wine to match each course.
After lunch there's time to browse the quaint shops and wander along the tree-lined streets of Berrima, a quaint Georgian village on the banks for the Wingecarribee River.
Then it's party (or siesta?) time for the trip back to the city.

I grew up in the Southern Highlands way back before there were any vines planted there. Now after more than 30 years guiding people from Africa to South America, as well as in and around Sydney, I've decided it's time to go back to my roots.
In 2018 I launched the Wildlife, Waterfalls & Wine day tour and it's been a hit with visitors to Sydney. As part of that tour I got to spend time in the Southern Highlands and I fell in love with the area all over again. The fabulous locally-produced food and wine was a big part of that. Now I want to share some of the flavoursome highlights with Sydney locals and visitors alike.

Where you'll be
Centennial Vineyards to learn about the pinot varieties used to make the region's award-winning sparkling, white, rosé and red wines. The garden at chef-hatted Eschalot restaurant to see where some of the ingredients for our country-style fine dining lunch are grown. Berrima to wander the historic township.

If you have 1 day off in Sydney and you like food and wine, this experience will be perfect for you. Steve is a very friendly and make the group feel like travel with close friends or family. The food and wines are fantastic. And very nice Sunday with all nice pick up of wines.
