What you'll do

As you step into our warm, aromatic bakery, we will greet you with an apron and a homemade treat of your choice. Then the lessons begin! Depending on the day and time, you will have the opportunity to learn personal recipes and master techniques for a wide variety of our handmade baked goods, from our renowned sourdough bread created with my own starter to traditional Greek cookies and pitas. I will take you through the baking process from the very beginning - choosing the right, high quality ingredients - all the way through to tasting the finished products. You will learn why certain ingredients are added at specific times, how water and air temperature affect the outcome, why we make certain breads or cookies for specific Greek holidays and traditions, and why I LOVE baking and nurturing my village. Zitsa truly is a magical place and while we work we can share stories about our different cultures, and life in the village in general (there is a lot to learn about this place and we are more than happy to tell you what makes Zitsa so special and why there is nowhere else we'd rather be!). We can give you some basic Greek lessons as well if you want! And of course when we finish, we get to share in eating what we've made. Often while we are baking, my mom is alongside us, cooking up some wonderful Greek dishes - if we have time, and she has made enough, we can share the meal.

If there is a specific thing you want to make, contact us as soon as you book your class so we can figure out what day and time is best for you to come. Also the start time is NOT SET - we had to set a time on the website but we can arrange by phone what is best depending on what you want to make.

My deep passion for baking is perhaps only surpassed by my love of sharing - sharing baking knowledge, culture, my village, and perhaps best of all, sharing food. My wife Anna & I have hosted over 1,000 people in our home, and always the best times are around the kitchen & baking tables.

My father opened the bakery the day after the old village baker closed. He knew the village needed a bakery and he wanted to set something up for his oldest son for the future. My family already had our sheep farm and vineyard. I started working in the bakery 27 years ago, at first just in the mornings before school. I didn't love it, but over time, I saw how the bakery is the heart of the village - I came to love being able to provide such an important staple to my community. Slowly it became my deep passion and now my art. Every day I create anew!

Where you'll be

We'll be at the Bakery of the Village. The exact translation of the Greek, Ο Φούρνος του Χωριού, is "The Oven of the Village." And the bakery really is the village's oven. At various times during the year, villagers will bring large trays of food or dough to cook in our big ovens as their home ovens are too small. Also, my mother & I often cater large events such as baptisms and memorials. And the bakery is a social meeting point, which we love.

Es war großartig in Kostas Bäckerei! Von Anfang an hatten wir das Gefühl, bei einem Freund eingeladen zu sein, der uns seine Begeisterung für die Backtradition vermitteln will. Und neben den vielen tollen Infos und Rezepten zum Backen traditioneller Pies bekamen wir von Kostas noch viele Geschichten über sein Leben und das Leben in einem griechischen Dorf. Am Ende lud uns Kostas noch ein mit seiner Frau Anna und den Kindern die gebackene Pita zu verzehren. Wir waren keine Kursteilnehmer mehr, sondern Freunde am Tisch der Familie. Absolute Empfehlung für dieses tolle Erlebnis! Und Kostas ist ein Bäcker mit Leib und Seele!

Mit Kostas in der kleinen Bäckerei von Tsitsas zu backen ist ein großartiges Erlebnis. Man merkt, dass Kostas hier seine Berufung lebt. Brot und alles drumherum ist seine Leidenschaft. Wir haben mit ihm örtliche Pies erstellt, aber Kostas geht auch gerne auf die Wünsche seiner Teilnehmer ein. Ganz nebenbei erfährt man etwas über die Geschichte der Bäckerei und des Ortes. Immer wieder kamen auch Bewohner des Ortes um ihre Speisen im Ofen zu garen. Daher auch der Name der Bäckerei: „der Ofen des Dorfes“. Nach dem Backen haben wir dann im Kreise der Familie zusammen gegessen. Wir fühlten uns sehr herzlich aufgenommen. Danke Kostas für Deine Gastfreundschaft! Absolute Empfehlung!!

What to bring

Clothes you don't mind getting a little dirty and full of flour!

Rubber-soled shoes - the bakery floor gets slippery with flour - the stickier your shoes the better.
