What you'll do

In this master class, the participants will learn how to prepare two types of ceviche. We will make a classical fish ceviche plus a delicious vegan recipe with either mango or Andean lupine, depending on the season. We will meet near my cousin's house, where the meal will take place. I will offer a starter snack and beverage and give an introduction to the participants. Everyone will be involved in the meal preparations. First, we will prepare a fresh juice and traditional “ají” spicy sauce to accompany the meal. Before starting cooking, we will wash the veggies and prepare all of the ingredients. As we finish preparing our dishes, we'll set the table, serve, and sit together to enjoy the food as a family. At the end of the meal, we will share a delicious Ecuadorian coffee or an infusion of natural herbs. After the activity concludes, I will share the recipes of the day's dishes with the participants.

Johanna

My passion for cooking has been passed down to me through my mother and grandmother. From both, I've learned several recipes, the secrets of flavor, and the importance of sharing meals for family union. During my time living in in Ayampe, I learned to cook from “local hands” some of the most delicious dishes of Ecuador's southern “Manabí” region. There, I also used to organize workshops on conscious cooking, as well as the “El Colibrí” art fair. Having spent time in Berlin, Istanbul, Tblisi, Medellin, and Puerto Escondido since 2017. One of the things I cherish about traveling is getting acquainted with and finding an appreciation for the gastronomic culture of every place I visit. Likewise, I see it as my calling to share the delights of the Ecuadorian cuisine, as well as travel experiences and tips for traveling in Ecuador
