What you'll do

After a beautiful boat ride from Isla Colon to Dolphin Bay, during which our captain will be looking for dolphins for you, I'll guide you through our chocolate farm on Isla San Cristobal where you can spot sloths, monkeys and caymans. We kick off the workshop with harvesting cacao pods & you'll get to taste fresh, fermented & roasted beans. After cracking, winnowing & grinding our freshly roasted beans, I'll show you how to make your own bonbons with conched chocolate. You can choose from various fillings & spices to personalise them. You'll then have some time to greet the farm animals & explore the garden (which is filled with fruit trees & flowers) while your bonbons firm up. After that all you have to do is enjoy your delicious new chocolate creations until the boat brings you back to Bocas Town.

After buying an abandoned cacao farm in 2014, I co-founded Finca Montezuma Chocolate Farm together with my Panamanian partner. My dad used to work in the famous Belgian chocolate factory Callebaut when I was young, and ever since I got to visit the factory I've been fascinated by (and perhaps a little addicted to) chocolate. No wonder my favorite Roald Dahl book was 'Charlie & The Chocolate Factory'! It's a dream come true to now be able to make my own 'single-origin' chocolate from scratch, but my absolute favourite is our dark milk chocolate. I've been doing this workshop with our overnight Airbnb guests since 2017 & I'm excited to now be able to open this experience to more people!

Where you'll be

We will conduct our workshop both indoors & outdoors: in & around the chocolate room & kitchen & in the cacao forest. On the boat ride to & from Isla San Cristobal our captain will be on the lookout for dolphins while you pass though Dolphin Bay.

It was our first time to make chocolate from scratch. Papito picked us up right on time in his own small fast boat and got us out to the island. Dorien showed us around her grounds that are right on the ocean. We saw small red frogs and sloths. We then did the entire chocolate making process from bean to bar. The chocolate was REALLY delicious. Papito then brought us back into town by his boat. We highly recommend the overall experience as it’s something you can’t do many other places.

J’ai adoré cette expérience. Papito, Dorien et leurs petites filles sont adorables. Dorien a pris le temps de montrer toutes les étapes pour faire des chocolats maison. Elle nous a fait visiter son jardin et nous a expliqué beaucoup de choses sur la nature environnante. Nous avons vu la fameuse grenouille rouge, des paresseux, des toucans, c’était super ! Je recommande a tout le monde de vivre cette expérience.

Not often one gets to share in a dream. Join Dorien on this tour and you become part of her dream to create chocolate literally from the ground up while living her life close to nature with her family. The tour includes a 30 minute boat ride each way from Bocas Town to Isla San Cristobal. Upon arrival, Dorien provides a tour of the cocoa trees while searching for red dart frogs and sloths. From picking cocoa pods to creating one’s own chocolates to bring home, Dorien shares her love and knowledge of all things chocolate You may get wet on the boat rides or a little muddy on the tour if you don’t accept the boots kindly provided, but expect a classic adventure while learning all about chocolate. The experience was better than we were expecting. We learned a lot about the process of making chocolate, and got to participate at each step along the way. We saw lots of wildlife, and the chocolate we made was very delicious. Making chocolate is in her DNA, but the highlight was their cute family and seeing how their daughters are learning their family’s craft and added a fun dynamic to the tour. We all enjoyed ourselves and would very much recommend this tour to anyone.

Dorien really knows her stuff! She has loads of experience in the world of chocolate, was an enormously gracious host, and above all was accommodating to everyone. She also gave an excellent tour of the beautiful area and managed a lot of different expectations and activities at once without us feeling rushed or being an imposition. This was such a great afternoon... Dorien was so knowledgeable about chocolate & the surrounding wildlife. They were great hosts ... even helping us with our tour time when we messed up our travel time!
