I am a former cooking teacher at the hotel schools of Menton, Cagnes-Sur-Mer and Nice.
My specialty: vegetarian cuisine and the use of organic products for over 40 years.
I have opened several vegetarian restaurants; the first was "L'artisan gourmand" (opened in 1978) in Menton, cited by Gault & Millau; then in Nice and Cannes. I have animated and organized many culinary trainings.
In many articles often presented as the 'Pope of vegetarian cuisine', I have written many books, the last two for Éditions de la Martinière: "Great vegetarian cuisine" - Photographer Jean-François Rivière and "Easy and daily vegetarian "- Photographer Anthony Lanneretonne.
