Welcome to my appartment! I will explain pasta origins in throughout the Mediterranean Rim, and its culinary technology. How to make the dough, which flours to choose, how and why ripen or dry the dough etc.

We will start our masterclass. I will first show and explain, and then you will prepare your own dough. Then we will make tagliolini, ravioli, and the local speciality: "barbajuan", a fried dumpling. We will dry half of the tagliolini.

I will explain you in live how to cook pasta. In order to get the best taste and chew possible, it is important to understand the cooking process. Then, time for lunch, with chick pitch beer from Brasserie de Nice, and a home made ice cream with a cup of coffee.
The masterclass is ending, you will take away your own dried pasta.
Other things to note
As a chef, I will introduce you to artisans, explain history, and techniques of pasta. Food is included, but feel free to buy anything you would like to try in the market !
