What you'll do

We'll be discovering how wild plants formed an integral part of life in Ireland throughout the centuries. Not only were they a source of food but also of medicine, cosmetic and raw materials, which was present in day-to-day living. The deep connection between humans and the landscape was nothing short of extraordinary! We'll be learning how to identify commonly found wild foods and ingredients and how to incorporate them into our daily lives, just as our ancestors did. You'll be surprised with the array and diversity of ingredients to be found. We'll be tasting some of the plants as we go along and, depending on the season, we'll get to taste fruits, leaves, nuts and flowers. All of this, off course, under the watchful eye of the local residents: lambs, squirrels and even a pig or two. In the end we'll sit down to a wonderful light lunch carefully prepared with organic and wild ingredients. And I promise: you'll never look at a nettle in quite the same way again!

For me and my husband foraging for wild ingredients is part of our life. I really love taking the time to find the right plants, carefully gather them in my basket and enjoying the anticipation of the many wonderful recipes I'll prepare with these simplest of ingredients. When I'm collecting wild plants I feel a very strong connection with nature and with the past, as I'm following in the footsteps of those who came before me. As a good friend puts it "we are all the descendants of successful foragers". Nothing gives me more joy than sharing this knowledge with others.

Where you'll be

Our setting will be the Castlewood Organic Farm, which dates back to the early 1700's, and where Dominic and Alison have been living and farming for nearly 20 years. In fact, it is thanks to their sustainable approach to farming that such thriving natural ecosystems can be found at the farm. And this is what makes this place so special both for the farmer and for the forager.

We'll be walking in country lanes and woodland tracks. Please do wear appropriate footwear and a waterproof coat could be useful.
