What you'll do
Boise is home to one of the largest Basque populations outside of the Basque Country in Northern Spain. I had the opportunity to live in the Basque Country for a year and since then have traveled back there both for work and for personal travel many times. The Basque Country is my "second home" and is my favorite place in the world to travel. Today is geared toward the person that wants to learn a little more about the Basque culture, which includes cooking, eating and drinking typical cuisine of that region, some of the best food in the world! We will make some of my favorite dishes that my host parents taught me while I lived with them in Bilbao, as well as provide you with a good overview of the Basque Culture and how it relates to Boise, Idaho. In order to give everyone plenty of space to cook and enjoy the experience, I keep the class to 5 people. Basque Peppers, Stuffed Piquillo Peppers, Tortilla Española or Croquetas, Paella, Basque Wine will be some of what we will cook, drink and enjoy! This class can also be done as a vegan or vegetarian class. There is the option to make Croquetas, Chorizo, Clams, and White Wine, or White fish with Piperade.
Having grown up in this city full of Basques, I was surrounded by the culture, people, and festivals since I was a young boy. I have always been fascinated by the Basque Country, so during college I lived in Bilbao for a year. I stayed with a Basque family and was able to perfect my Basque cooking, as cooking had always been a passion and had done it for many years in a local restaurant. I have traveled and worked extensively in the Basque Country and call it my second home. I have led Basque Cooking classes at A'Tavola market in Boise and I look forward to offering them now in my own home!
