As far as the class goes, Carla will have you leaving there feeling like an expert in preparing mole. She made it so simple and easy to follow as well as fun to make. She also tells you exactly where you can get all the ingredients. Now the mole itself was by far the best mole I have ever had! I was never a fan of mole at first but because of its popularity I decided to give it one more try and I am so glad I did. The mole was fantastic and now it’s amazing that now I know how to make it myself

Cooking mole with Claudia this morning was such a rewarding and meaningful experience.
While I am 100% Mexicana, I have always been wary of making mole from scratch because it can be a very lengthy process; however, Claudia facilitated a much easier method that transformed chiles, tomatoes, spices and nuts in a mole as delicious and authentic as my childhood's but much simpler to make.
Afterwards, we sat at the table to enjoy pollo, arroz verde, tortillas and frijoles that Claudia had ready to accompany our mole. I truly felt among friends and highly recommend this class to you :)

I made Mole with Carla on a Sunday afternoon on my last day in Chicago. I grew up with my aunt making mole for my family but never had the opportunity to learn her recipe. Making mole with Carla was a comforting and educational experience. Mole can seem a bit daunting due to the many ingredients it requires, but Carla walked through process in a comprehensive and hands-on way. We prepared, made, and ate in her home. All while speaking Spanish the entire time and occasionally English when I forgot how to say certain words in Spanish. I would definitely recommend this experience.
