What you'll do

Did you ever see a proffesional butcher cut a beef carcass? Do you know the whole truth about Argentinian pastrami? And what's the proccess behind dry aged steaks?
In this tour you'll learn the secret of Buenos Aires' butcheries while you taste cold cuts, special chorizos and meat sandwiches with a glass of wine or vermouth.
We'll kick off in a butchery dedicated to dry aging meat, where a specialist will explain how the steaks are aged. Here we'll taste some cold cuts and a glass of Malbec.
Then we'll walk five blocks towards another spot, where we'll presence the butchery of a beef carcass live! With his sharp knives, the butcher will cut off every part of the animal while he tells us what's the best way to cook it.
The last stop is the underground of a pastrami specialist, who will explain the precise process to obtain the best Argentinian version of this New York classic.
And then... a big toast to celebrate our beloved Argentinian meat.
Other things to note
We'll see tons of raw meat. If you are used to buying and cooking steaks, no problem. If not, maybe you'll have to turn your face to the wall.

The tour with Claudio was great! My husband is a meat lover and he was super excited about this experience. We went to three different places and learned about the production of dry-age meat and pastrami, besides seeing an entire cow prepared into the traditional argentinian cuts by a very experienced butcher. His insight about the meaning of meat for Argentinian culture was illuminating! This is really an opportunity to see and talk to experts - my husband even found out that one of them was teaching a course a few days later and decided to attend - and he loved it! A great experience if you're very into meat.

Fun event, if you like beef and pork. The companies we visited were first rate. The only negative was that the butcher workington the cow spoke no English, to be expected in Argentina.
