What you'll do

In this 3-hour class, you'll experience every step of the sourdough bread process. You'll mill your own flour in an electric stone mill, mix the dough, add the starter, and prepare your dough for fermentation. Because the bread rise takes a long time, we then go right into prepping the dough I made the night before. We'll shape, proof, score and bake the loaves, churn some butter and eat as much bread as you want. You go home with * Your dough to bake later * A natural 45-year-old starter to continue baking with (and yes, I've traveled with my starter many times, so you can take it home with you). * Mason jar for your starter to live in * 1kg of freshly milled flour * A proofing basket * A butter churner * A bench scraper. * A Lame, which is a professional scoring tool

I am the founder of The King's Roost, LA's only urban homesteading and home-milling emporium and learning center. After a dozen years in the corporate world, I decided to do something more substantial: teach others how to make things more simply and healthfully. I am a huge fan of home milling (think grinding your own coffee, but with grain). I've taught this class to hundreds of students, and have been written up in numerous publications like the LA Times, The LAist, the Eastsider and more. This class was the only culinary activity listed in LA Magazine's best things to do in LA for 2018, and I've taught this class in Massachusetts, Rhode Island and Florida.

I provide coffee, seltzer and we often finish class with a toast of champagne

You may take home a free 1-kilogram bag of fresh-milled flour (or whole wheat berries if you have a mill already)

The King's Roost is my store. I host the class at the kitchen there. If the class is held on weekdays, the store will be closed to the public.
