What you'll do

Enrich your culinary knowledge and learn how to make French pastry and desserts. Discover the great secrets and neat tricks that make French pâtisserie, an unsurpassed art. You will learn the simple but precise techniques that make French desserts incomparable to no other one and so unique. These 3 hours courses will allow you to discover and master, through making the great classics of French desserts, many different techniques. During the French pastry class you will learn how to make basic cake mixtures: Joconde sponge cake, ladyfinger sponge cake, biscuit dacquoise or Genoise sponge cake. You will also learn how to make various creams: french butter cream, diplomat cream, classic pastry cream, mousseline or Chantilly cream. Last but not least, you’ll learn about the technique for assembling the French layers cake “Entremet” in a ring. In short, you’ll learn the secrets for satisfying and dazzling even the most discriminating sweet tooth! Techniques : – Foisonner Crème au Beurre : Whipping butter – Bain-marie : cooking caramel custard in a water bath in the oven. – Emincer : Slice fruits thinly and regularly. – Ruban: Mesuring the consistency of the meringue.

Our chefs, Séverine & Julie are real bonbon. Their love of the art of pastry-making is one of their best qualities, one that has been enriched and developed through years of experience. Both are graduated from the International Culinary School Le cordon Bleu and from the France’s oldest hotel and restaurant training school, CFA Médéric. French but open to new horizons, our chefs have spent several years abroad. This experience instilled in them the joy of sharing with other cultures, contributing a great openness of spirit and empathy for the excitement of voyagers in search of discoveries.

Where you'll be

Our workshop is located few steps away from Montmartre. We’ve arranged the studio layout to provide you with a large, pleasant, comfortable space. Our kitchen is equipped with all the necessary materials so that each participant can work under the best conditions, without having to wait in line or take turns. The Rochechouart quarter has a commercial side as well as a leisure side so you can enjoy the Parisian mood stroll along after the class.
