What you'll do

This is 2 hours workshop to learn how to cook and serve minimal Japanese food in traditional way. The basic is called "Ichiju-Issai" (一汁一菜 one soup one side dish). A bowl of rice, a bowl of soup, and another tiny side dish is the construction. This triangle is the core of Japanese cuisine which is served and eaten in any period. Nowadays this tradition is almost lost due to transition of the times. Still rarely found in Temple cuisine or local villages. So we are going to study how to cook rice properly tasty, how to create different soups (Japanese soup is not only Miso soup but thousand of variation you will find) and basic technique with simple ideas for daily meal of side dish.

Nobuyasu

I am a Chef of local family restaurant. I studied buddhist cuisine during my work as an assistant cook in Temple. Agriculture and hunting is our tradition. Between mountain and ocean, we get a lot of benefit from nature. So I am especially focused on Vegan cuisine and wild meat (deer, boar, etc). I hope you will enjoy my cooking.

Where you'll be

We mostly spend time for workshop in the back kitchen of restaurant. Especially the kitchen is not proper open place like TV cooking show. But please don't forget ; this is a journey to find the truth in a small bowl of soup and rice. Journey to unlimited world through tiny kitchen. We flee ourselves from culinary obsession. Simplicity perfects the gate to another depth. The triangle on the tray is the entrance.
