What you'll do

Pick up is from an easy access station in Sabina, 40 minutes from Rome. We take a leisurely drive through beautiful olive groves, visit a 2,000 year old olive tree, and then head to a fantastic local restaurant. Before lunch I will teach you how to taste olive oil, explain what makes good oil and what makes the bad stuff too. During lunch I will show you how these prize-winning oils pair with food in the most surprising way. This is an introduction to an ancient ingredient which, thanks to modern technology, has become a spectacular new ingredient which even the most famous chefs still do not know about. You will leave this day with a wealth of knowledge about production techniques, history, and the freshness, intensity and variety that quality olive oil can offer.

In 1982 I came to Italy, tasted freshly-made olive oil, and fell in love with this magical substance. In 1986 I began to grow olives in the Sabine Hills. I was the only non-Italian taster for the Slow Food Olive Oil Guide for 5 years, and now judge oil competitions in Japan, Turkey, Greece, Italy and U.K. I've appeared on BBC tv and radio, and won the Ambassador of Italian Olive Oil award 2017.
