Cooking class how to make a bread with ancient grains Our workshop includes both the preparation and tasting of the bread made with organic flour from ancient Sicilian grains. It is included also a glass of organic wine. If you've dreamed of making bread but you don't know where to begin, why don’t you join us for this intensive 2-hours class. You'll learn the basic skills to prepare a great bread from scratch. Our instructor will walk you through the process–from making a starter and mixing dough to the proper kneading techniques. We'll cover essential steps: - how to proof and shape the bread; - how to make into practice the new skills by preparing a delicious artisan bread. - You''ll also learn about the ancient Sicilian organic Grains Theoretical part -the bread: local history and use in the Sicilian culinary tradition -sourdough: basic knowledge and nutritive historical value -the ancient Sicilian grains: description, biodiversity, environmental and nutritional value. Display of the catalog of 32 differents crops. -organic ethics in Sicily: context and produce At the end you will recive a dried natural yeast for making bread at your home.

My name is Serena, I'm environmental educator since 2002 and I currently work in two fields: sustainable education and hospitality. I live near Taormina, in a small town Savoca, "one of the most beautifull town in Sicily". If you want to spend time with me and my Association, Zest, you will be engaged in different activities, linked to organic Sicilian food and ancient variety of food, grains in particulary.
About the organisation
ZEST is an Association created to promote environmental education, circular economy and sustainable tourism. ZEST, in particular, deals with promoting the ancient, indigenous and wild varieties of the Sicilian territory, both in terms of education and tourism. It also promotes all forms of informal hospitality and all agricultural practices that focus on the care of the earth and soil.

Our experience includes: - Small Tour of Savoca city center - Visit to the Museum of local agricultural, where an expert will illustrate the history of lemons, silk and ancient sicilian grains. - Cooking class with tasting . Depending on weather conditions the cooking class will be outside of museum or in one farm or different structure close by. Savoca It 'was the set of the movie The Godfather, 1972.
