What you'll do
First we will discuss how to make wild yeast starter, the biology of starter, and the different types. Next we will discuss the tools necessary to make sourdough bread in a wood fired oven or at home. The fun begins now as we prepare the dough, and the steps to make a delicious sourdough with a great crumb! The participants will learn to mix and knead bread, correct folding procedures, and how the dough should *feel* (stickiness, is that a word?) also how the dough changes throughout the process. While the dough goes through the various resting and proofing stages, we will prepare the wood fired oven. The oven takes about three hours to get to temperature. Now we will make pizza and eat, maybe have a glass of wine or sparkling water. I will have made the pizza dough the night before, we can talk about why that is important for a tasty crust. After pizza, we will remove the fire from the oven and mop it out. We'll talk about proper oven temp, the importance of scoring, and discuss several ways to score and the equipment used. Then we'll bake. While baking we can discuss the importance of steam, how to know when bread is done, and what temperature to reach.
I make wild yeast sourdough bread and have been selling my boules, focaccia, pretzels etc. at local Farmers Markets for years. I bake them in the Wood Fired oven that I built myself in our backyard. This experience will teach participants step-by-step how to grow wild yeast at home, how to make sourdough bread and bake it in the outdoor Wood Fired Oven, or at home in their own oven! While making the bread, we will fire up the oven and when it reaches the desired temperature; we will have a pizza party! While we make pizza, the oven cools to the perfect baking temperature, then we bake bread!
The guest will have pizza for lunch or afternoon snack.
The guest can enjoy a glass of wine, soda or sparkling water with pizza.
Each guest will leave with a banneton to bake bread, liquid starter, and a boule of their own home made sourdough bread.
Where you'll be
This experience takes place at my home. We can talk about where to buy good flours and the right equipment, but we will be at my house the whole time. The time spent will be inside preparing the sourdough and pizza, and outside baking; equal parts of both. If it's nice out, we can do the discussion outside.
