What you'll do
We will begin with a tour of our permaculture farm property called Orto Farm, by visiting the kitchen garden, berry orchard, greenhouse, our purebred chickens and the passive solar design features of our home (15mins). We'll gather in the farm kitchen to begin mixing our dough ingredients. We will discuss leaven, how to make it, what it is, how to use and care for it. We will explore different sourdough bread recipes, discuss bakers % and when to add special ingredients to your dough. We will discuss no knead and knead methods and the difference between tin and free form loaves. You will be able to taste sample breads including chocolate bread. Each of you will take home a loaf of bread. We will make flat bread using two recipes and bake various vegetables, make dips and other fillings for a shared lunch. Tea and coffee available throughout the day. This is a very hands on class and almost everything we eat on the day will be made on the day, so be prepared to chop and bake, knead and slice and enjoy the very best of la dolce, deliziosa vita!
I come from Le Marche Region in Italy where eating and cooking well are considered essential ingredients for a happy life. Over the past 20 years I have taught cooking workshops for CERES, Local Government Events, private gatherings, multicultural festivals, and more recently at The Grampians Grape Escape. And now I have the pleasure of hosting gastronomy workshops from my very own farm "ORTO". I studied sourdough bread baking under master baker Ken Hercott from the Bread Builders. I acquired a certificate in permaculture from David Holmgren in the late 90's and bring this knowledge and ecological sensibility to my classes. I really love teaching, and thoroughly enjoy the opportunity to share my skills with others on our permaculture property. When I am not baking I cultivate our kitchen garden. Growing food is very important to me.

Where you'll be
You are invited into our private home and farm called ORTO. A 15 acre property just outside Daylesford on beautiful volcanic soil. Our farm is young but well on its way to becoming highly productive. We are establishing a fruit & berry orchard, wetland, kitchen garden, prairie garden, nut trees and truffle inoculated oaks. We keep pure breed chickens & have designed it based on permaculture, biodiversity and regenerative farming principles.

Always communicate through Airbnb. To protect your payment, never transfer money or communicate outside the Airbnb website or app.
Up to 3 guests aged 14 and up can attend.
You’ll need to take a picture of yourself that matches the photo on your ID. This is so Airbnb can confirm who’s actually going on the experience. You’ll only have to do this once.
Bring a pen for taking notes, your camera or mobile phone for taking photos. Bring a play list of music too. Warm clothing in winter for the outdoor tour, jacket, scarf, hat & warm jumper.
