What you'll do

We’ll have a welcome drink on arrival, then we’ll put on our aprons, roll up our sleeves and get straight into the pasta- making. While the pasta rests, I’ll show you how to make a homemade ricotta type cheese for the ravioli filling. Afterwards, we’ll move on to the pesto, walnut and mushroom sauces, these are the sauces for the 3 Ligurian speciality dishes.
-“ Mandilli di Sea” ( “ Silk Handkerchiefs”) -Lasagna type pasta with Pesto sauce.
- “Pansotti alla Salsa di Noci “ - Ravioli with ricotta and spinach in a walnut sauce.
-“ Taglierini ai Funghi” - Fine- cut tagliatelle in a tomato and wild mushroom sauce.
The next next stage involves the “tirare la sfoglia” - (the rolling out of the pasta), the cutting, the filling and the shaping. You’ll learn 5 or 6 different pasta shapes.
After we’ve prepared our trays of freshly made pasta, we’ll cook and eat the pasta dishes with a glass of wine around the the table and then to finish off, there’ll be a surprise sweet and a traditional italian moka coffee.

I was born in Liguria, Italy, but brought up in England in a family of Italian restauranteurs and caterers. This background nurtured my passion for cooking and at the age of 13, I was a regional winner and finalist of “The Young Cook of the Year Competition” held at the Savoy Hotel, London, where I served up “Pasta alla Salsa di Noci” ( Pasta in a Walnut sauce). My pasta-making experience grew over the years as I was involved in the start-up of “Pasta Italiana”, my parents’ home-run pasta- making business, (lasting for 20 years), where I learnt to make fresh pasta and sauces based on traditional recipes handed-down from my grandmother who lived in Liguria. Now I live in Como, run and teach my own English courses and I am an Airbnb Superhost and I would love to share my pasta-making passion with anyone who adores pasta like me.

Great experience of making pasta from scratch! Anna was very helpful and friendly and the pasta dishes at the end were absolutely delicious! We’ve got some super recipes to make at home too. Would definitely recommend this experience!

We had an absolutely fabulous time today with Anna.She was a great hostess, very organised and a good teacher. She had pre prepared some delicious sauces to go with our fresh pasta which we sat down together to eat once we had finished making our pasta- super fun. Learned a lot, who knew how to make ricotta cheese with milk and vinegar! We cant wait to try some of her recipes in the future. Note to Airbnb- we don’t think it is necessary to mandate the use of single use plastic and disposable tableware. Bad for the environment and no longer a COVID necessity.

We had a lovely day with Anna. We made with to other 2 nice guys pasta and had a lot of fun in her place. Anna is so nice and brings her tradition of marking pasta to you. I liked the she teaches from scratch and explain it very easy. We learned a lot of about Italiens and pasta. Highlight at the end: enjoyed together out Self-made pasta. I can really recommend this activity!

Anna was a great host! We have been very lucky as we were the only people to do the class and it was amazing! Anna was very friendly, welcoming, interesting. She is a great teacher and we really enjoyed ourselves. I think it is a great activity to do during a rainy day. The recipes arw very easy to reproduce at home and Anna sends you all the instructions to do so which is a plua. I would really like to do another class when we come back, maybe gnocchis ? ;) Thanks a lot !
