What you'll do
The experience begins after meeting in my café, “d:matcha Café & Picnic" First, I will explain about the tea overall. Just like wine grapes, there are many varieties of tea trees. Any given variety can be used to make black tea, green tea, and oolong. However, each variety imparts different flavors into its teas. The first tasting will be sencha that we grow and process in Wazuka Kyoto. The taste differences between the varieties are quite apparent when tasted side-by-side. I will explain how to brew the tea at home as you discovered your preferred variety. Following the sencha tasting, you’ll be able to hand-grind matcha on our stone mill and learn how to make matcha by using a bamboo tea whisk and matcha bowl. Then we’ll taste three different varieties of matcha. Just like our sencha, we grow and process all our matcha locally. Your guide through the whole experience will be Daiki, Chisei, or Natsuki. Chisei is Daiki's younger brother and one of d:matcha’s tea farmers. In the harvesting season, he is mainly in the tea fields, leading our farming team. He has a deep knowledge of tea farming and production. Natsuki is one of the members of the d:matcha team. I am an agronomist and a Japanese Tea Instructor who used to work in the corporate world. After quitting my job and finishing grad school, I followed my passion for green tea and its cultural heritage, and founded a green tea company, which I run with my wife, brother and our extended family.
