About this unique and in-depth experience:
Visiting Koji Brewhouse, learning Koji making from the owner, participating in Koji workshop making/using something like salt koji or sweet koji, tasting various Koji sweets including azuki bean sweet koji, and fianlly Q&As with Koji craftsman. This 5 hours include traveling time from/to Tokyo of 2 hours.

I am a certified Koji Rice Malt Meister and Fermentation Regimen Adviser living in Tokyo. In 2016, I became a healthy eating expert as a Koji meister and started to teach how to improve and sustain your health through eating. This method is based on traditional Japanese diet, and Koji Rice Malt has a lot to do with. In this specially tailored session, you will learn Japanese traditional Koji making at a brewhouse. You'll also experience Japanese-style fermentation workshop on site.
The brewhouse owner Hiroyuki Kumazawa, is a 10-year professional in Koji manufacture. He makes and sell authentic Koji products in this tailor-made brewhouse. He will show and explain all about Koji making.

Where you'll be

This Koji brewhouse is an authentic place where Koji is actually made and customers can experience Koji-used workshop. Workshop is for anybody, but the production site is not open for everybody. You need a permission from the owner. If you join this session, you can look into the entire area of the site and learn fully on how to make Koji and what's important to make it better, etc. All lecture will be interpreted from Japanese to English.

I reached out to Motomi san on a whim to see if there was a way to find what I really wanted, which was to tour an actual Koji house to see the traditional methods. She organized a one-of-a-kind experience and it was AMAZING! She's a wealth of knowledge and experience, and I've learned so much from her and honestly consider her a friend now.
