Learn all about the art of making dashi (Japanese broth) under the guidance of me, a kombu (kelp) expert, in a hands-on experience using all five senses at Azumaya Tsuruhashi Honten, my specialty store. • Hear about the inherent value of kelp and the role and history of dashi in Japanese food culture. I’ll break down exactly what goes into the dashi-making process. • Make your own dashi using natural ingredients and explore the different types of kombu dashi through differences in characteristics and flavor. • Enjoy Japanese small plates prepared by Jun Tojo, chef of the restaurant Sumibi Kappo Inase, using my own kombu to make the most of the kelp’s delicious flavor. Sweet Japan: Make Mochi & Dorayaki, Enjoy with Matcha making

At my cozy kitchen, you’ll learn how to make traditional and delicious Japanese confectionery (wagashi), including namagashi (fresh sweets) and yakigashi (baked treats), along with preparing matcha tea. • Make four types of wagashi with my step-by-step guidance: tricolor dango (three-colored sweet rice dumplings), fresh fruit daifuku (fresh fruit wrapped in soft mochi rice cake), mochi ice cream (demonstration only), and dorayaki (sweet red bean pancake sandwiches). You’ll even emboss your dorayaki with a traditional hot stamp design! • Before we get hands-on, I’ll share insights into the cultural significance and techniques behind each Japanese treat. •At the end of the lesson, you’ll have the chance to experience a short tea ceremony, where you’ll learn how to prepare matcha by whisking it yourself and enjoy it alongside the sweets you made. Make arare rice crackers with Japan’s only certified master

Roast and finish handcrafted arare (rice crackers) at Sōzen—the confectioner that produces arare for the Imperial House of Japan, the Royal Family of Dubai, and many five-star hotels—guided by Japan’s only certified jouwazashi (master arare craftsman). • Roast the arare—which are prepared over ten days by skilled artisans—by shaking them over heat in a wire mesh basket and coating them with Sōzen’s secret sauce. • While your arare are cooling, roast tea leaves to make hōjicha (roasted green tea) and enjoy it with a sampling of our signature warabimochi (bracken starch dumplings). I’ll share a bit about Sōzen’s history as you work. • Pack your finished arare and place them in a traditional local textile pouch to bring home as a memento of our time together.
