At Left Bank Ciders, we forage wild apples from the Catskill Mountains, making small-batch hard ciders and meads that celebrate this region’s abundant wild apple trees. Go behind the scenes of the cider-making process while sampling a curated flight of our ciders. • Start with a welcome glass of one of our signature pours while we share our approach to making ciders as stewards of the earth. • You’ll take a guided tour of our 19th-century fermentation cellar, where you’ll observe the cider-making steps: from wild apple foraging and fermentation to aging and bottling. • Gather at a communal table, cozy booth, or friendly bar stool, where you’ll enjoy a curated flight of ciders. You’ll leave thinking that apples might just be the coolest fruit in the world (like we do!) and with a newfound appreciation of the region’s wild apple heritage.

Embark on an educational journey exploring the world of fungi on a guided mushroom walk at Catskill Fungi. • We'll begin by welcoming you to our commercial kitchen with an introduction to Catskill Fungi's mission, sustainable practices, and mushroom-based products made on-site. During the kitchen tour you'll see how we make our mushroom extracts and you'll receive a custom magnifying glass designed to help you examine the intricate details of the fungi throughout the tour. • Next, we'll head outside to the educational mural, which illustrates mushrooms that grow in the Catskill Mountains as we talk about how they grow and their environmental significance. • As we walk over to our mushroom logs, you'll learn about different growing techniques, species you can grow at home, and the benefits of log-based cultivation. • Next we will grab baskets take to the forest to look for mushrooms. We will talk about the significance of the mushrooms we find, how to identify them, and whether they are edible, poisonous, or medicinal. Once back at the Catskill Fungi Kitchen you are welcome to purchase a variety of Catskill Fungi products, including mushroom extracts, books, painted conks, local ceramics, and other handcrafted items. You'll leave with a hand lens for mushroom identification and a new appreciation for fungi that thrive in the Catskill Mountains.

Long before you hear it, you’ll feel it—the pulse of Kaaterskill Falls echoing through the forest. This is more than a hike; it’s a trek to one of the Catskills’ most iconic natural wonders. Weave through towering trees with me, climb natural rock staircases, and listen as the roar of cascading water grows louder with every step. • Meet at the Kaaterskill Falls trailhead for check-in and equipment fitting. Here, you’ll receive snowshoes or climbing spikes as needed, and get a quick rundown of the trail route and what to expect. • Begin the climb through towering woodland, followed by the Lower Falls Viewing Area for a mesmerizing, ground-level look at the cascading water. • Next, tackle a steeper incline as the landscape transforms into rugged rock formations. Natural ledges offer sweeping vistas of the Catskill Mountains along this stretch, and spots to rest and hydrate. • When you reach the Upper Falls Lookout, the full splendor of Kaaterskill Falls unfolds. But your ascent doesn’t end there. Continue to the very top and enjoy a moment of tranquility while soaking in panoramic views. As you descend and step away from the trail, the roar of the falls and the crisp mountain air will linger, calling you back for your next adventure.

Golden hour kayak on the Hudson River

Join me, an expert adventure guide and Catskills native, for a sunset kayak paddle along the historic Hudson River, looping around the Hudson-Athens Lighthouse as the sky turns pink. Beginners and experienced kayakers are all welcome. • Meet at the kayak launch in Athens, where you’ll get fitted for your gear. I’ll share an overview of our route and run through safety guidelines and paddling techniques. • Off you go! Paddle toward the lighthouse, exploring hidden inlets and spotting wildlife as you go. Along the way, I’ll discuss the history of the lighthouse and this region. • Tide permitting, pause at the Middle Ground Flats, a small forested island, to stretch your legs and take some photos. • As the sun sets, paddle to a scenic spot for quiet reflection and more photos, before heading back to our starting point as dusk settles in. You’ll leave having enjoyed a serene Catskills sunset—and an unforgettable experience on the water.

Horseback riding in the Catskill Mountains

Take a guided horseback riding tour on our 300+ acres of private mountain trails lead by an experienced guide. After signing up and meeting the horses, we will show you the skills you need to ride through our trails. You will be accompanied by an experienced trail guide the entire time. This is a beginner friendly ride, most of the ride is walking, we go at the pace of the least experienced rider in the group. If you would like to do some more trotting, don't want to ride in a group, or are experienced, we recommend booking a private ride. The ride itself is 1 hour long and is done in a western saddle. Please note the minimum age is 7 years old to ride and we have a weight limit of 220lbs. Please feel free to reach out with any questions or requests before booking!

From there, we'll drive to the trailhead and embark on our hike - with scenic vistas, waterfalls, and pristine summits - there's an adventure waiting - no matter your skill level. Learn about the flora, fauna and geography along the way as you immerse in the best of the Catskills with a licensed hiking guide & adventure photographer. Hikes range in difficulty from easy to challenging, and we do our best to tune to the overall skill level of the group. Whether you're a first time hiker or seasoned mountaineer - we're excited to share our favorite routes and hidden gems of the mountains with you. Throughout the hike, we'll capture photos of both you and the scenery with professional cameras and iPhones. You can keep your phone in your pocket and enjoy the 100+ candid, action and posed photos of your adventure with 2 days of the hike in an online gallery. Solo travelers, please message prior to booking, as we do typically require a 2 ticket price minimum to confirm a trip. All guides are NYS DEC Licensed Guides with CPR/First Aid and Wilderness First Aid certifications.

Golden Hour Hike to an Epic Catskills Sunset View

Get ready to experience one of the most incredible corners of the Catskills with a local, licensed hiking guide! We’ll be hiking during golden hour to arguably the top viewpoint in the region to watch the sunset. Along the way, we’ll scramble through some of the Catskills’ most interesting geological formations while learning about both the ancient and modern history of the area. We’ll enjoy some time at the top of our climb to soak in the views as the day comes to a close. There will be light snacks and plenty of time to capture epic photos. I also capture photos of the group and each guest, which will be shared in an album with you following the hike. We’ll then descend safely by last light, moonlight and torchlight back to our starting point. If you’ve never hiked at night before, you’re in for a uniquely magical experience! This hike is considered easy-moderate depending on your hiking experience, with some fun, optional challenges along the way to test more seasoned adventurers. Note that there is a $10 fee per vehicle to enter this part of Catskill Park. Solo travelers, please message prior to booking, as we do require a 2 guest minimum to confirm a trip. Both Moe (Badge #8246) and Cliff (Badge #9454) are New York State DEC-licensed hiking and camping guides who have earned required certifications in first aid and CPR.

I am originally from NYC !! I made the move to this area back in 1999. See below for what levels on which days are available !! We will have class indoors. at this point . Our studio is surrounded by windows- so you still get to experience the beauty of our countryside. When outside, we will practice yoga under the willow trees and shade sails. You will be surrounded by the beautiful and wild landscape of Woodstock! Other things to note... Please let me know if you have special needs I also want to make sure you are in appropriate class level. Private lessons are available at different times. Essential oil and hydrolat distillation in the Hudson Valley

My name is Libby and I am a clinical aromatherapist, herbalist, organic skincare formulator and experienced educator. Discover the ancient art of distillation on a large property in upstate New York, in the picturesque town of Rhinebeck. In this experience, you will learn how to distill two products - essential oil and hydrolat (medicinal water) - using either a copper alembic or a stainless steel still. Aromatic remedies have been distilled using this method for thousands of years. Through hands-on instruction, you will learn the basics of distillation in relation to these medicinal waters and oils, preparing the plant matter and setting up the still. Guests will be able to taste a variety of hydrolats which have been sourced directly from the land, as we wait for the magic of the still to produce the aromatics. You will make a wellness product using essential oils and hydrolats that can be taken home while we discuss ways in which these products can be incorporated into daily life. We'll end with you filtering the fresh essential oils and hydrolats to take home and enjoy. *Please contact me if a time/date that works for you is not available OR if you want to book a private group for up to 30 guests. Five Waterfalls Catskill History and Ecology Walk

Put on your Indiana Jones cap and explore a lost civilisation of Indian, Dutch, English and American settlers through their rock structures left behind. Learn about how 400 years of civilization changed the Catskills Forest and who or what is changing it today. On our 1 mile journey deep into the forever wilderness we provide an understanding through evidence of why the current flora and fauna exist from its humble beginnings about 15,000 years ago today. The beautiful five cascading pools of the historic Vernooy Kill Falls provide opportunities for children and pets to enjoy humans first touch of the natural cool waters. No business or civilisation exists upstream so this water is at its purist and provides opportunities to slide or jump into pools that nature has created over hundreds of million of years. In 1664, a French Hugenot named Cornelius Vernooy immigrated from Holland and founded a mill in 1703 to satisfy the demand of local farmers. His mill complex survives, unpreserved, as a testament to the early Americans that used it before and after the war for Independence. The contrast of the 20’ tall rock wall transports us back to the time of Rip Van Winkle. With campfire rings and swimming pools available, you are free to spend as much time at the falls as you like (3 day limit for campers) or you can maybe join Scott as he walks back to the Trails End parking lot.
