2. Pork roll rice paper (Pork sliced rice paper)
The dish is simply a pork roll with rice paper and wet noodles with a bit of raw vegetables, pineapple, green banana…dotted with spicy sour fish sauce. But the secret is in the meat selection. The meat used must be butt or shoulder meat then steamed to keep the sweet taste of meat intact, when slicing is very thin and especially at the ends of the meat must have skin. Delicious pork rolls of rice paper also depend on raw vegetable plates. Raw vegetables used for side dishes are all common vegetables, but must be fresh: Lettuce, basil, price, bitter vegetables, buds, green bananas, … The rice paper is also carefully selected, must be soft but still chewy so that when the roll is not torn. And one thing that is indispensable is the seasoning water, the dipping sauce that, if missing, it would not be possible to have a perfect pork roll. Best of all, the seasoning fish sauce is made from three types of fish sauce, mackerel fish sauce and aromatic fish sauce combined with a little ginger, garlic, chili… a small bowl of dipping sauce. When eating a thin sheet of rice paper, add a wet noodle leaf, put on top of the last favorite vegetables is the delicious piece of pork, then roll it all up and dip into the bowl of seasoning water and slowly enjoy. The soft sweetness of pork, the cool taste of vegetables, rolled up in a wet cake and noodle leaves along with a bit of sour, spicy seasoning to create a taste that makes everyone fall in love with it.
