The classics are trippa alla fiorentina (tripe with tomato and parmesan), bollito misto (mixed boiled cuts of meat), and spezzatino (meat stew cooked for hours). They also serve lingua (tongue) and poppa (breast), they are as yummy as the rest and you can even mix the two. Make sure to ask for the "salsa verde", a delicious green parsley sauce that enhances the flavours, and "piccante" (spicy) if you're in for the whole ride. ”
