When Shem Adams moved out of Philly to Connecticut, he missed his proper Philly steak sandwiches so much that he decided that he had to make them himself. He opened a small, unpretentious shop in Norwich and started churning out such amazing concoctions that his Phillys were declared the best sandwiches in the country several years in a row. The Doctor is just one of his designer cheesesteak options: Minced, all-star rib eye steak, chopped Spanish onions, and All-American Cheese Whiz in a Philly roll. They did a beautiful job renovating the old building, keeping as much as they could, such as antique tin panels on the walls and ceiling.
