While the Campeche beach (in front of THAI) is beautiful and a great place for surfing, sometimes the NE wind picks up and you wish you were somewhere else. Try Açores in the south of the Island. It is fairly protected from the northern winds and a great place to enjoy a sunny day. The adjacent beach, Solidão, is also worth visiting once and it is a short stroll by the sand bar from the parking area in Açores.

This is another gem of the southeast coast of the island. Matadeiro can't be reached by car (you have to park or drop the bus by Armação beach) but it is worth the short stroll to explore this area. It is a nice place to surf on southern wind days.

Getting around

Consider renting a car

Florianópolis has a lot of beaches but getting from one point to the island to another can be really challenging if you are relying on public transportation only. Uber works okay too, specially if you are going to a nearby place but they can get expensive if you are planning to visit places more than 20 km away. I strongly suggest renting a car to explore the island, at least for a couple of days.
