Tucked into an unassuming corner on the definitive Red Hook block of Van Brunt street, Fort Defiance exudes the vibe of the neighborhood in which it lies. A local's paradise, it's cozy and quirky, with warm, friendly service. It's been around since 2009, and is operated by the writer/bartender St. John Fritzel. Thus, a lot of attention is paid to the beverage program, from brunch drinks to after dinner cocktails. The food from chef Matthew Fleming can't be overlooked, though. American, with some Southern influence, the breakfast, lunch, brunch and dinner menus offer simple and satisfying fare, like Creole red beans on toast and chicken liver paté with bacon-onion jam. Mondays are burger nights, on Wednesdays dollar oysters are served until 11pm, and every Thursday the restaurant plays host to "a weekly celebration of all things tiki", otherwise known as The Sunken Harbor Club.
